Health Benefits by Dr. Allison Freeman, ND
Wheatgrass:
Highest caloric value of the microgreens, as well as 8g protein/cup. May support in regulating blood sugar levels and balancing insulin levels. The deep green colour of the wheatgrass contains a high chlorophyll level. This green has the power for renewal for the body as a whole, as well as a special healing value for the liver. For the liver, wheatgrass can help to elevate glutathione levels, the master antioxidant for supporting the 2 major phases of liver detoxification. While wheatgrass has been known as a plant for juicing, it can also be pulverized by a high power blender and this method ensures the fibre can also be consumed. Wheatgrass contains some anti-microbial properties to maintain healthy gut function. May help in blood sugar regulation, insulin balance and healthy weight loss.
Pea Shoots:
Pea shoots contain nutrients to support healthy blood sugar metabolism. The high folate content protects cells from DNA damage associated with numerous chronic diseases. They are heart-healthy absorbable vitamin K to regulate blood clotting and high fibre content. The choline also supports fat metabolism in the liver.
Sunflower:
Sunflower microgreens have a sweet and warming thermal nature. They are a complete protein, meaning they contain all the essential amino acids. When added to meals, the protein content can enhance a sense of satiety to the meal, without adding a feeling of fullness. This can be useful for athletes, growing children, or anyone seeking balanced weight.
